Got Juevos?

After consuming a delicious helping of Juevos Rancheros goodness at The Corner Market in Lower Greenville, I was inspired to create my own version. Behold my Hunger-Counquereing-Mexican-Lasagna-Like-Dish:


It goes a little something like this:

Preheat the oven to 350*.
Brown 1lb. ground beef and stir in taco seasoning.
Line the bottom of a 9x9 dish with 4 to 5 white corn tortillas.
Add seasoned ground beef, enchilada sauce, and a layer of cheese.
Add another layer of 4 tortillas.
Evenly spread one can of refried black beans, one can of Rotel, and more cheese.
Add another layer of 4 tortillas.
Evenly spread one can of Sarah's secret ingredient, black olives, and MORE CHEESE!
Bake for about 20 minutes or until cheese is melted.

While the delictable dish is baking, fry four eggs (juevos). These will go on top of the finished product.

The Year of the Wolf

February 3rd marked the beginning of the Chinese New Year 2011. According to the Chinese calendar, this year happens to be the "Year of the Rabbit." Respectfully, I must disagree. This year, most certainly, belongs to the Wolf.

For so long, the Wolf has been lacking the recognition it so clearly deserves. Sure, the Wolf has been represented in movies, literature, and even television, but most often the Wolf is portrayed as a harrowing, howling predator.

In Native American legends, the Wolf is characterized as not only adventurous and free, but also protective and compassionate. The Wolf is believed to possess supernatural strengths, as evidenced in "The Twilight Saga." One of the Wolf's most commonly overlooked powers is the ability to pick up chicks. (See video below.) T.V. Talk

After pumping you all up for a night of ABC comedies last Wednesday, I was disappointed to see they were all re-runs. :\ Next time, I'll be sure to do my homework!


This oversight, however, allowed me the opportunity to catch a high school classmate on American Idol. His name is Jerome Bell, and in the words of Jennifer Lopez, "Remember that name!"


I'm not typically a fan of American Idol, but I have to say, I will follow the show this season as long as Jerome is a contestant. I must also say, I'm enjoying the new judges!

These Boots Were Made for Runnin'

I've really never been much of a runner. As a challenge to myself, I recently began training for a 10K. To assist me in this endeavor, I have enlisted the help of an Olympian, an iPhone app, and a spirit coach. Sidenote: I was born and raised in Texas and have not owned a pair of cowboy boots since 4th grade. These seemingly unrelated ideas of running a 10K and owning cowboy boots will soon collide. As a reward for completing my first 10K in a few months, I will acquire these lovely Old Gringo boots! I'm keeping my eye on the prize!!!

T.V. Talk

After an incredibly mundane Monday post, I feel inclined to provide some entertainment to all my fans. (Yes, all three of you.) Also, the third day of every week shall be henceforth known as "T.V. Talk Tuesday."

This season, I've become a devoted enthusiast of a few new shows. As far as the wide world of television programming goes, my favorite night of the week is, undoubtedly, Wednesday night. In my humble opinion, the lineup on ABC is by far the best: The Middle, Better With You, Modern Family, and Cougar Town, each of these showcasing the same type of satirical humor. I am well aware of Modern Family's popularity; it's the obscurity of the other shows that concerns and perplexes me. After considering this conundrum, I have come to only one possible explaination for the lacking adoration: the people of America have not truly given these shows a chance. So, this week I urge you to forego American Idol, and tune in to ABC instead. You won't be disappointed!

The Chronicles of Casia

A pink, little bundle of joy arrived by mail today. Her name is Casia. This 16 button digital dream machine is not only capable of keeping time, but can also perform simple mathematical algorithms. It is truly a masterpiece. I will wear my Casio LDF40-4 on my wrist and keep it close to my heart.
